my friend, the friand

some people associate friands with french. then french food with them tall hat snobby chefs. and then get put off and run away. if that didn't do it, the price tag would.

but why take it out on the friand? they're but merely oval shaped victims of these social injustices. they just wanna be your friend. and why wouldn't they be? small, nutritious and very yummy. most of all, economical. the most expensive part would be getting a hold of a friand pan to make it in the first place - i got mine on sale for $1 :P (however, muffin pans will do too). so why not befriend the friand? it's simple. even kids can make it!


friands

1 cup almond meal (ground almonds)
1/2 cup plain flour, sifted
1 cup icing sugar, sifted
5 egg whites
100g unsalted butter, melted
handful of berries (raspberry, blueberry, etc)

Preheat oven to 180C

1. Combine almond meal, flour and icing sugar
2. Stir in egg whites until mixture just comes together
3. Stir in the melted butter and stir until just combined
(NOTE: don't try and simulate a tornado. you don't wanna stir things too much and make glutenous cakes)
4. Grease friand pan (makes 6-12 friands depending on pan)
5. Spoon mixture into pan making each one come up 2/3 way up pan and poke in berries (lots = yummy. i like abt 5 small berries in mine)
6. Bake in oven for 20-30mins
7. Remove from oven and place on cooling rack to do their thing

This makes the classic friands which turned out to be too dense for the likings of my greatest critics - my family. For a lighter version, whisk egg whites beforehand to in between soft and firm peaks and fold in flour and melted butter. As my sis would put it, it's divine... ;)
